Pumpkin Whoopie Pie Filled With Dulce De Leche

Ingredients
  

Ingredients for the cookies

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbs pumpkin spice
  • 125 grams unsalted butter room temperature
  • 1 cup sugar
  • 1/2 cup pumpkin puree
  • 1 egg
  • 1 tsp vanilla extract

For the coating of the cookie

  • 1/2 cup sugar
  • 2 tbs pumpkin spice

For the filling

  • 3/4 cup Dulce de leche
  • Flakey Salt optional

Instructions
 

  • pre-heat the oven to 180 degrees Celsius.
  • Prepare a baking tray with a silicone mat or parchment paper.
  • In a bowl, mix the butter and sugar until fluffy.
  • Add the pumpkin, egg and vanilla. Mix until combined.
  • Add the rest of the cookie ingredients. Mix until combined but be careful to not over mix.
  • Once dough is ready, prepare the coating. Mix the sugar and the pumpkin spice.
  • Roll dough into 1 tablespoon balls and cover in the sugar coating. Place on baking tray and press them to shape into cookies. Bake for 9 minutes.
  • Once you remove them from the oven, tap the baking tray against the counter to flatten the cookies even more and let cool.
  • Once cookies have cooled, spread the dulce de leche filling and form your sandwiches. Optional: add flakey salt to the dulce de leche filling for a salted caramel feel. Enjoy!
