Pumpkin Whoopie Pie Filled With Dulce De Leche

Ingredients for the cookies
- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tbs pumpkin spice
- 125 grams unsalted butter room temperature
- 1 cup sugar
- 1/2 cup pumpkin puree
- 1 egg
- 1 tsp vanilla extract
For the coating of the cookie
- 1/2 cup sugar
- 2 tbs pumpkin spice
For the filling
- 3/4 cup Dulce de leche
- Flakey Salt optional
pre-heat the oven to 180 degrees Celsius.
Prepare a baking tray with a silicone mat or parchment paper.
In a bowl, mix the butter and sugar until fluffy.
Add the pumpkin, egg and vanilla. Mix until combined.
Add the rest of the cookie ingredients. Mix until combined but be careful to not over mix.
Once dough is ready, prepare the coating. Mix the sugar and the pumpkin spice.
Roll dough into 1 tablespoon balls and cover in the sugar coating. Place on baking tray and press them to shape into cookies. Bake for 9 minutes.
Once you remove them from the oven, tap the baking tray against the counter to flatten the cookies even more and let cool.
Once cookies have cooled, spread the dulce de leche filling and form your sandwiches. Optional: add flakey salt to the dulce de leche filling for a salted caramel feel. Enjoy!
