This oatmeal is one of the most delicious breakfast I’ve made in a while! It is so decadent, spice-full and it literally transports you to the middle of fall! It tastes just like an apple cobbler but healthy… and who doesn’t like dessert for breakfast??? The ingredients are very simple and you probably have most of them hanging around in your pantry.
Oats made with coconut milk, topped with caramelized apples, nuts and a drizzle of honey… I MEAN…. I had it for breakfast (and pre-workout), got home from the gym and I had to have some more because it was THAT GOOD.
FALL INSPIRED HEALTHY OATMEAL
Ingredients
- 1 cup Oatmeal I use gluten free oats
- 1 cup Coconut milk Any other milk works fine
- 1 cup Coconut water If you don't have, feel free to change for milk
- 2 apples
- 1/4 cup mixed nuts
- 3 tbs honey extra to drizzle
- 2 Stevia packets
- 1 tbs Cinnamon
- 1 tsp Nutmeg
Instructions
For the Apples
- Chop the apples into desired shape and place them on a medium-heat pan
- Cook the apples with around 1-2 table spoons of cinnamon, 1/8 cup of water until the apples soften up a bit.
- Add 3 tablespoons of honey and let caramelize.
- Remove from heat once, the apples are soft and brown in color.
- Set aside for later use.
For the oats
- For the oatmeal, mix the milk, coconut water, oats and stevia in a medium heat pan.
- Let simmer stirring constantly until it becomes thicker and creamy.
- If it is too dry, add more milk, and if its too liquid add more oats.
- Stir in cinnamon and nutmeg to taste.
To Serve
- Serve the oats first, add the caramelized apples, add the chopped nuts and finally drizzle some honey!
