Equipment

  • 1 food processor or blender
  • 1 Oven
  • 1 baking pan 20 x 26 cm

Ingredients
  

  • 2 cans chickpeas (or 3 cups of home cooked chickpeas)
  • 2 tsp baking powder
  • 1/2 tsp each: salt & baking soda
  • 1 cup coconut sugar or substitutes
  • 1 cups oats blended or 2/3 cups flour (white, oat, spelt, buckwheat)
  • 1/3 cup yoghurt or applesauce mashed banana
  • 1/2 cup nut butter/tahini
  • 1/2 cup chocolate chips

Instructions
 

  • Start by preheating your oven to 350 degrees Fahrenheit.
  • In a good food processor, blend all the ingredients (except the chocolate chips) until smooth. Then, fold in the chocolate chips.
  • Transfer the batter into a greased or parchment-lined 8x8 pan. Optionally, you can sprinkle additional chocolate chips on top of the batter.
  • Bake for approximately 30 minutes. The blondies may appear slightly undercooked when you take them out, but they will firm up as they cool.

Notes

*Sugar substitutes: You can use regular granulated sugar, brown sugar or date sugar, honey, maple syrup, or xylitol or granulated erythritol for no-sugar blondies.
