FALL INSPIRED HEALTHY OATMEAL

Ingredients
  

  • 1 cup Oatmeal I use gluten free oats
  • 1 cup Coconut milk Any other milk works fine
  • 1 cup Coconut water If you don't have, feel free to change for milk
  • 2 apples
  • 1/4 cup mixed nuts
  • 3 tbs honey extra to drizzle
  • 2 Stevia packets
  • 1 tbs Cinnamon
  • 1 tsp Nutmeg

Instructions
 

For the Apples

  • Chop the apples into desired shape and place them on a medium-heat pan
  • Cook the apples with around 1-2 table spoons of cinnamon, 1/8 cup of water until the apples soften up a bit.
  • Add 3 tablespoons of honey and let caramelize.
  • Remove from heat once, the apples are soft and brown in color.
  • Set aside for later use.

For the oats

  • For the oatmeal, mix the milk, coconut water, oats and stevia in a medium heat pan.
  • Let simmer stirring constantly until it becomes thicker and creamy.
  • If it is too dry, add more milk, and if its too liquid add more oats.
  • Stir in cinnamon and nutmeg to taste.

To Serve

  • Serve the oats first, add the caramelized apples, add the chopped nuts and finally drizzle some honey!
