- 1 cup unsalted butter softened
- 1 cup brown sugar packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 3 cups old-fashioned oats
- 1 cup raisins or chocolate chips optional
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
Fold in the old-fashioned oats and, if desired, the raisins or chocolate chips.
Drop rounded tablespoons of dough onto the prepared baking sheets, leaving enough space between each cookie.
Bake for 10-12 minutes or until the edges are golden brown. The centers will still be soft.
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
