Grilled Halloumi & Peach Salad + Mint Lime Dressing

Ingredients
  

  • 2 Peaches
  • 3 cups Rugula
  • 150 grams Halloumi Cheese
  • 1 cup Cherry tomatoes
  • 2 tbs Pumpkin Seeds

Mint Lime Dressing

  • 1 tbs Olive oil
  • 1/2 tbs Apple cider vinegar
  • 1 tbs Honey
  • 2 tbs Lime juice
  • 1/2 tbs Lime zest
  • 2 tbs Fresh mint leaves (thinly sliced)
  • Salt to taste

Instructions
 

  • Mix all of the ingredients for the mint-lime dressing and set aside.
  • Grill thin slices of halloumi and peaches.
  • Add the rugula and mix with the dressing until it coats all of the leaves.
  • Mix in the cherry tomatoes with the rugula.
  • Serve and top with halloumi slices, peach slices and sprinkle with pumpkin seeds.
