Pumpkin Spice Granola (Vegan, GF, DF)

Ingredients
  

  • 2 cups oats quick tip: use 1 cup quick oats, 1 cup steel cut oats for better texture
  • 1/4 cup cranberries
  • 1/4 cup pecans
  • 1/4 cup pumpkin seeds
  • 3 tbs maple syrup
  • 3 tbs coconut oil
  • 1 tbs chia seeds
  • 1 tbs pumpkin spice

Instructions
 

  • In a pan, toast the oats for about 5 minutes in medium-high heat.
  • Remove the oats from pan.
  • Add the coconut oil, maple syrup and pumpkin spice to the pan and mix well.
  • Add the rest of the ingredients, including the oats and mix until everything is combined.
  • Let cook in an oven pan, making sure it is spread out so that it cools evenly.
  • Enjoy!
