Summer BBQ: Veggie Skewers with Avocado Oil
Grilled veggie skewers on avocado oil. Vegan, gluten free, dairy free, paleo.

- 1 Yellow bell pepper cut into small squares
- 1 Red bell pepper cut into small squares
- 1 Orange bell pepper cut into small squares
- 1 Large Zucchini cut into small squares
- 1 Large onion cut into small squares
- 2 tbs Avocado oil any other oil works fine
- 1 tsp turmeric
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh herbs to garnish optional
In a bowl, mix the bell peppers, zucchini and onion.
Add spices, salt & pepper and avocado oil and mix with the vegetables.
Place the vegetables on the skewers.
Grill the skewers until slightly burned.
Remove from heat and garnish with herbs. Serve as a side dish.
