Summer BBQ: Veggie Skewers with Avocado Oil

Grilled veggie skewers on avocado oil. Vegan, gluten free, dairy free, paleo.

Ingredients
  

  • 1 Yellow bell pepper cut into small squares
  • 1 Red bell pepper cut into small squares
  • 1 Orange bell pepper cut into small squares
  • 1 Large Zucchini cut into small squares
  • 1 Large onion cut into small squares
  • 2 tbs Avocado oil any other oil works fine
  • 1 tsp turmeric
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh herbs to garnish optional

Instructions
 

  • In a bowl, mix the bell peppers, zucchini and onion.
  • Add spices, salt & pepper and avocado oil and mix with the vegetables.
  • Place the vegetables on the skewers.
  • Grill the skewers until slightly burned.
  • Remove from heat and garnish with herbs. Serve as a side dish.
