Tapioca Flour Waffles | Gluten-free

Tapioca flour waffles are a gluten-free variation of the classic waffle, made primarily with tapioca flour (also known as yuca or cassava flour). In this recipe, I’ve taken the traditional Colombian pan de bono dough and transformed it into waffle form. The result is a waffle that’s crispy on the outside with a soft, chewy center, and filled with the delightful flavors of feta and mozzarella cheeses. Unlike regular waffles, which can be light and fluffy, tapioca flour waffles have a unique chewiness, making them a distinctive and satisfying breakfast or snack option.

Ingredients
  

  • 2 eggs
  • 1/4 cup oil
  • 1/2 cup milk
  • 1/2 cup feta cheese
  • 3/4 cup shredded mozzarella cheese
  • 1 1/4 cup yuca/tapioca flour

Instructions
 

  • Preheat your waffle iron to medium-high heat.
  • In a blender, add the eggs, cheeses, oil and milk, blend until well combined.
  • Transfer mix to a bowl and fold in the tapioca flour until you have a smooth, thick batter.
  • Lightly grease your waffle iron and pour in about 1/4 cup of the batter per waffle.
  • Cook until golden brown and crispy, about 3-5 minutes per waffle, depending on your waffle iron.
  • Serve hot and enjoy the cheesy goodness!
