This colorful bowl is full of flavors and textures that you will love! Inspired bytypical ingredients of Vietnam, this Vietnamese noodle bowl can be eaten in two ways: in the form of rice noodle salad or rice paper wraps.

Ingredients
  

  • 1 Yellow bell pepper in julienne
  • 1 Red bell pepper in julienne
  • 1 Cucumber in julienne
  • 1 Carrot in julienne
  • 1 handful Lettuce of choice
  • 300 gr Protein source of preference Chicken, Pork, Steak, Tempeh or Tofu
  • 1 Packet Rice vermicelli noodles
  • Fresh Coriander
  • Crushed Peanuts
  • Limes (optional, to seve)

Sauce

  • 2 tbs Honey
  • 2 tbs Rice Vinegar
  • 1 tbs Sesame Oil
  • 1 tsp Red pepper flakes
  • 1 tsp garlic powder
  • 1 tsp fresh ginger
  • salt to taste

Instructions
 

  • Cook the rice noodles according to package directions. Let cool. Once cool, you will use the rice noodles as your base for the other ingredients. Decorate the bowl with each ingredient separately to make the colors shine. For the sauce, mix all the ingredients. ...And as simple as that, enjoy!

Summer Rolls

  • With the ingredients that we use for the salad, these wraps can also be made, and you can serve them as a snack or a delicious appetizer. You will only need rice paper.
  • Moisten the rice paper in warm filtered water. Fill the center of the paper with paprika, cucumber, carrot, lettuce, cilantro, rice noodles and the protein. Fold two ends of the circle over and roll up the sides to form a roll, like making a burrito or wrap. The more compact, the better the results.
