If you are bored of your usual cucumber, tomato salad for lunch, then this is for you. Ditch your boring salad and upgrade your lunch by making a Grilled Halloumi & Peach Salad with a mint-lime dressing. This salad is fresh, quick and delicious.
Lets talk about the main characters of this recipe:
If you have fresh peaches laying around, why not grill them? You could also used canned peaches for this salad. If are trying to eat healthier, then I would recommend sticking to fresh peaches to avoid consuming too much sugar.
Halloumi is a typical greek cheese. Since it has a very high melting point, it is perfect for grilling. You could substitute this cheese for crumbled feta. Substitute only if you can’t find it in the supermarket, otherwise don’t as the taste works so well with this salad.
Other ingredients you will need for the Grilled Halloumi & Peach Salad + Mint Lime Dressing:
- Rugula (Lifestylemartina’s favourite), but feel free to use any other type of salad that you like.
- Cherry tomatoes (again, highly recommended but can be substituted or omitted)
- For the dressing: olive oil, apple cider vinegar, lime, honey, salt and fresh mint. So easy.
- For something crunchy, add pumpkin seeds or sliced almonds (or both!)
Tip: If you would like to make this salad a bit more heavy, wholesome and hearty then add cooked and cooled pearl couscous or quinoa.

Grilled Halloumi & Peach Salad + Mint Lime Dressing
Ingredients
- 2 Peaches
- 3 cups Rugula
- 150 grams Halloumi Cheese
- 1 cup Cherry tomatoes
- 2 tbs Pumpkin Seeds
Mint Lime Dressing
- 1 tbs Olive oil
- 1/2 tbs Apple cider vinegar
- 1 tbs Honey
- 2 tbs Lime juice
- 1/2 tbs Lime zest
- 2 tbs Fresh mint leaves (thinly sliced)
- Salt to taste
Instructions
- Mix all of the ingredients for the mint-lime dressing and set aside.
- Grill thin slices of halloumi and peaches.
- Add the rugula and mix with the dressing until it coats all of the leaves.
- Mix in the cherry tomatoes with the rugula.
- Serve and top with halloumi slices, peach slices and sprinkle with pumpkin seeds.
- Enjoy!
