Summer is the perfect time for an outdoor grill. Since the weather has been extremely nice lately, im sure many of you are excited to make your own barbecue, and therefore you need to make these veggie skewers to accompany your next grilled meal. I will leave the recipe below and a few tips/alternatives.
TIPS:
- If you are using wood sticks, make sure to wet them first so that they don’t burn.
- If you are not using a barbecue, but you would still want to make this recipe, you could do so using a grill pan.
- To help with the burning process, brush extra oil while cooking.
- I used only bell peppers, zucchini and onions but other veggies would work great such as aubergine (eggplant) or asparagus.
- I would accompany this veggie skewers with grilled steak. For a vegan bbq, I would make tofu skewers or vegan schnitzel as a main dish.
This lunch turned out delicious and you should make it too. Shredded chicken with tomato sauce, green beans, salad (lettuce, tomatoes and avocados with olive oil and apple cider vinegar) and of course, the veggie skewers.
Summer BBQ: Veggie Skewers with Avocado Oil
Ingredients
- 1 Yellow bell pepper cut into small squares
- 1 Red bell pepper cut into small squares
- 1 Orange bell pepper cut into small squares
- 1 Large Zucchini cut into small squares
- 1 Large onion cut into small squares
- 2 tbs Avocado oil any other oil works fine
- 1 tsp turmeric
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh herbs to garnish optional
Instructions
- In a bowl, mix the bell peppers, zucchini and onion.
- Add spices, salt & pepper and avocado oil and mix with the vegetables.
- Place the vegetables on the skewers.
- Grill the skewers until slightly burned.
- Remove from heat and garnish with herbs. Serve as a side dish.
