Easy & Quick loaded nachos to share during your next movie or game night. Your friends and family will be happy to come to your next gathering, once they try this recipe.
Lets break it down.
Nachos are one of the staples in the Mexican cuisine. However, they have been extremely Americanised as many of the ingredients used are not typically used in Mexico.
You can customise these easy & quick nachos with the ingredients you have at home. It doesn’t matter if they turn out Mexican or American, unless you want them to be. Just use the ingredients of your choice and what sounds good to you.
You will need a base of the following ingredients:
- Nachos
- Cheese, you need one that melts.
Here is a list of toppings you could use, pick any and as many as you want:
- Black beans, refried beans or pinto beans
- Some sort of meat: Cubed steak, shredded chicken, carnitas or shredded meat (optional)
- fresh toppings: onions, tomatoes, lettuce, olives, grilled corn, cilantro
- Salsa, guacamole, pico de Gallo and/or sour cream
You will also need: An oven and an oven safe pan
To make it Vegetarian: A super tip is to grill onions and a mix of red bell peppers (green, orange, yellow and red bell pepper). Add a layer of nachos, beans of choice and the grilled veggies. Layer cheese on top and repeat the process until your pan is full. Bake until cheese melts and top with fresh lettuce, olives, corn, cilantro, sour cream and guacamole.
To make it Vegan: Use crumbled Mexican spiced tofu and vegan cheese. Add a layer of nachos, beans of choice and the crumbled Mexican spiced tofu. Add a layer of vegan cheese on top and repeat the process until your pan is full. Bake until cheese melts and top with tomatoes, onions, lettuce, grilled corn, cilantro, salsa and guacamole.

To make it healthy: instead of using nachos, bake corn tortillas with olive oil until crispy. Use low-fat mozzarella or vegan cheese. Avoid re-fried beans and sour cream. Try to not use so much cheese and opt for a lean meat.

Easy & Quick Loaded Nachos to share
Ingredients
- 1 bag nachos
- 2 chicken breast cooked in Mexican spices, shredded
- 1 can black beans
- 1 can corn
- 1 bag Mozarella Cheese
- 1 tomato cut into small squares
- 1 avocado
- cilantro
- 1/2 cup sour cream
- 1/4 cup salsa
Instructions
- Pre-heat the oven to 180 degree Celsius
- In an oven safe pan, add a layer of nacho chips
- Add a layer of chicken, beans and corn
- Top with a generous layer of cheese
- Repeat this process one more time finishing with a layer of cheese
- Bake for approximately 15 minutes, or until cheese has melted
- Remove from oven and top with tomato, avocado, cilantro and sour cream
- Serve with salsa and ideally a margarita!
