Can you believe the fall months have arrived already? It feels like it was march just a few days ago, LOL. It has been raining and cold for a few days already, here in The Netherlands, which can only mean one thing. FALL IS HERE! Let’s make a recipe that you will eat the entire season: Pumpkin Spice Granola.
This granola is perfect if you want to eat healthier but delicious during the autumn months. Full of flavours, micro and macro nutrients, this granola is the perfect addition to all of your breakfast dishes. It is very easy and simple to make, see below for two easy ways of making it.
How to make this Pumpkin Spice Granola:
Ingredients:
- 2 cups oats (quick tip: use 1 cup quick oats, 1 cup steel cut oats for better texture)
- 1/4 cup cranberries
- 1/4 cup pumpkin seeds
- 1 tb chia seeds
- 1/4 cup pecans
- 3 tbs maple syrup
- 3 tbs coconut oil
- 1 tbs pumpkin spice
If you can’t find Pumpkin spice where you live, you can make it yourself.
Pumpkin Spice Mix Recipe:
In a jar mix:
- 3 tbs cinnamon
- 2 tsp ground ginger
- 1 tsp ground cloves
- 1 tsp nutmeg
Two ways to make this granola:
In an oven:
To make this recipe in an oven, just mix all the ingredients in a bowl and spread evenly in a baking tray. Bake at 180 degrees for about 10-15 minutes or until it looks crispy. Let cool.

Pumpkin Spice Granola (Vegan, GF, DF)
Ingredients
- 2 cups oats quick tip: use 1 cup quick oats, 1 cup steel cut oats for better texture
- 1/4 cup cranberries
- 1/4 cup pecans
- 1/4 cup pumpkin seeds
- 3 tbs maple syrup
- 3 tbs coconut oil
- 1 tbs chia seeds
- 1 tbs pumpkin spice
Instructions
- In a pan, toast the oats for about 5 minutes in medium-high heat.
- Remove the oats from pan.
- Add the coconut oil, maple syrup and pumpkin spice to the pan and mix well.
- Add the rest of the ingredients, including the oats and mix until everything is combined.
- Let cook in an oven pan, making sure it is spread out so that it cools evenly.
- Enjoy!
