Healthy berry pancakes. Sugar-free homemade jam. Stacked pancakes with creamy berry sauce in between. Topped with with more berries, granola and coconut chips. I mean, come on. Breakfast can’t get better than this.
This recipe will be divided into 3 sections: the pancakes, the creamy berry sauce, and the homemade berry jam. The pancakes were made with Lifestylemartina’s usual easy healthy pancakes recipe. The jam can be done previously and stored up to a week in your refrigerator and the creamy sauce literally takes 1 minute to make.
This is the type of breakfast that you have on a weekend, as it is a bit heavy and filling. A black coffee goes amazing with this dish as it compliments the flavours extremely well. Don’t drink coffee? swap it for a cup of matcha latte for a stable caffeine boost.
To make the homemade berry jam:
You will need frozen berries, artificial or natural sweetener, lemon juice and chia seeds. I use stevia as my sweetener of choice. Other options for sweetener are xylitol, Sucralose, or Yacon syrup. Lemon juice works great with this berry jam. If you have extra time, then zest some lemon and add it to the jam, it will provide amazing flavour. The chia seeds help the jam thicken, it’s optional. However, using chia seeds is extremely recommended.

Healthy Berry Pancakes + Homemade Berries Jam
Ingredients
Pancakes
- 1 egg
- 2 egg whites
- 1/3 cup oat flour
- 1 tbs chia seeds
- 1 tbs coconut oil optional, to cook
For the berry jam
- 2 cups frozen raspberries and blueberries
- 2 tbs lemon juice
- 2 tbs chia seeds
- 1 tsp stevia
Creamy berry sauce
- 2 tbs homemade berry jam
- 1/2 cup greek yogurt
Toppings
- 1/2 cup frozen berries
- 2 tbs granola
- 1 tbs shredded coconut
Instructions
For the pancakes
- Blend all ingredients for the pancakes
- Let the pancake batter rest for 10 minutes
- In a medium heat pan, pour 1/6 of the batter
- Once bubbles appear, flip the pancake
- Cook the pancake for an extra minute on the other side and set aside
- Repeat cooking process 6 more times or until batter finishes
For the homemade jam
- In a medium heat pan, add the berries, stevia, lemon juice and chia seeds
- Cook all ingredients while mixing
- Remove from heat once thickened
- Let cool and store in a jar
Creamy berry sauce
- In a small bowl, mix greek yogurt with the homemade berry jam
Serving
- Stack pancakes adding creamy berry sauce between each of the pancakes
- Pour homemade berry jam over the entire pancake stack
- Top with extra berries, granola and coconut chips.
